When the founding director of Smokin' Gun first arrived in Queensland Australia from Texas, he was amazed at how meat put on a gas grill was called BBQ. Missing the delicous slow smoked goodness from back home he decided to design and fabricate a smoker here in Australia to share the authentic Texas BBQ experience with SE Queensland.
Our custom 'revolver style' smoker uses all natural local wood as the heat and smoke source for cooking. The fire is built and maintained in the firebox and the meat is slow smoked for hours in the smoke chamber. Only the best quality meats and ingredients are chosen and only traditional recipes are served.
Smoking meat has been a part of Texas tracing as far back as the Caddo Indians. These Indians (American Indigenous people) lived in East Texas and called their confederacy of tribes 'Te-hass' meaning 'those who are friends'. This, from the early Spanish settlers, was spelled Tejas and when translated to English became what is now known as Texas, USA.
Texas is known around the world for many stereotypes but most people that have lived there or visited will concede that good BBQ is more than a stereotype. The key ingredient is the smoke. Many people have learned to cook with smoke but Texans have been mastering it for hundreds of years.
Traditional Texas BBQ mains include ribs, sausage, and our signature smoked brisket. Brisket is naturally a tough cut of meat however when slow smoked for up to 14 hours using an all natural wood fire it is tender and juicy on the inside with a crisp smokey bark on the outside.
Served on butcher paper with tasty side dishes, bread, bbq sauce, and the fixin's (pickles, onions, jalapenos) it's hard to find a better tasting meal.
